Spray a large skillet with cooking spray and heat over medium. Cook the seasoned turkey, breaking it into small pieces, until fully cooked. Transfer to a clean bowl and wipe the skillet clean.

Whisk eggs with remaining ¼ teaspoon salt, ⅛ teaspoon black pepper, and a splash of water. Spray the skillet with cooking spray, heat over medium, then add eggs. Stir gently until softly scrambled. Transfer to the bowl with turkey.

Add half of the shredded cheddar cheese, salsa, and chopped cilantro to the turkey and eggs. Mix until well combined.

Lay tortillas flat on a clean surface. Divide mixture evenly, about ⅔ cup per tortilla. Fold edges and roll tightly to form burritos.

Spray a griddle or large skillet and heat over medium. Place burritos seam-side down and cook for 2–3 minutes until golden. Flip and cook an additional 2 minutes until both sides are toasted.
