Line an 8×8 inch baking pan with parchment paper, spray with nonstick cooking spray, and set aside.

In a medium bowl, combine semi-sweet chocolate chips with half of the sweetened condensed milk (about 7 oz). Melt in the microwave in 30-second increments, stirring well between each until smooth. Add 1 tsp vanilla extract and mix thoroughly. Spread the mixture evenly into the prepared baking pan.

In a separate medium bowl, combine white chocolate chips with the remaining half of the sweetened condensed milk (about 7 oz). Melt in the microwave in 30-second increments, stirring between each until smooth. Stir in 1 tsp vanilla extract and fold in Christmas sprinkles. Gently spread this layer over the semi-sweet chocolate layer in the pan.

Sprinkle additional Christmas sprinkles over the top layer. Refrigerate the fudge for at least one hour until fully set before slicing and serving.
