Combine softened butter, minced garlic, chopped parsley, and salt in a small bowl until fully incorporated. Set aside.

Heat olive oil in a skillet over medium heat. Add chopped cooked shrimp and sauté for 2-3 minutes until heated through. Remove from heat.

Spread garlic butter on one side of each bread slice. On the unbuttered side, layer mozzarella, shrimp, Parmesan cheese, and red pepper flakes if using. Top with another slice of bread, buttered side out.

Preheat skillet or griddle over medium-low heat. Place sandwiches onto the surface and cook for 3-4 minutes per side until bread is golden brown and cheese is melted, pressing gently with a spatula to aid melting.

Remove sandwiches from heat and allow resting for 1-2 minutes before slicing and serving. Optionally, accompany with marinara sauce or tomato soup.
