Thanksgiving Leftover Turkey Quesadillas (Printer-Friendly Version)

A tasty mix of turkey, cranberry, herbs, and melted cheese wrapped in a crisp tortilla.

# Ingredients Needed:

→ Tortillas

01 - 4 medium flour tortillas

→ Protein

02 - 1 1/2 cups cooked turkey breast, chopped or shredded

→ Cheeses

03 - 2/3 cup shredded mozzarella cheese
04 - 2/3 cup shredded Swiss cheese

→ Herbs

05 - 3-4 fresh sage leaves, chopped (or substitute with thyme or rosemary)

→ Condiments

06 - 1/2 cup cranberry sauce

# Step-by-Step Directions:

01 - Heat a large skillet over medium to medium-low heat.
02 - Place one tortilla on the skillet and evenly spread a layer of Swiss and mozzarella cheese over the entire surface. Top one half with turkey, cranberry sauce, and chopped herbs.
03 - Allow the cheese to melt slightly, then fold the tortilla in half over the fillings. Grill until each side is golden brown and crisp.
04 - Remove from heat, cut the quesadilla into thirds or quarters, and serve immediately.

# Helpful Hints:

01 - Use either homemade or canned cranberry sauce; canned will retain color better when cooked.
