Lay one tortilla flat. Spread cheese blend evenly on half of the tortilla, add sliced steak on top of cheese, then sprinkle more cheese to cover steak. Spread jalapeño sauce evenly on the empty half of the tortilla.

Fold tortilla over filling. Place in preheated skillet and cook until bottom is golden brown and cheese begins to melt, about 3 minutes. Carefully flip and cook the other side until golden and cheese is fully melted, approximately 2-3 minutes.
