Soak walnuts and cashews separately in water for at least 2 hours. Soak Deglet Noor dates for 30 minutes to soften.

Drain the soaked nuts and dates thoroughly. Combine walnuts, cashews, dates, raw cacao powder, and reishi mushroom extract powder in a food processor. Blend until a sticky dough forms.

Add honey or maple syrup to the mixture and pulse again until fully incorporated and mixture is cohesive.

Using your hands, shape the mixture into 20 equal-sized balls, about 1 inch in diameter each.

Place the balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up before serving.
