Heat olive oil in a large skillet over medium-high heat. Add sliced onions and mushrooms, stirring occasionally until softened and lightly browned, about 3 to 4 minutes. Push to one side of the skillet.

Place patties in the skillet beside the vegetables. Cook undisturbed for 4 to 5 minutes to form a crust. Flip and cook the other side until internal temperature reaches 165°F (74°C).
