Wash tomatoes, jalapeno, onion, cilantro, and garlic thoroughly under running water. Pat dry with paper towels.

Quarter the tomatoes, chop the onion and jalapeno, and mince the garlic if not using whole cloves.

Add lime juice and half of the tomatoes to the base of the blender. Follow with jalapeno, onion, garlic cloves, and cilantro. Top with the remaining tomatoes, salt, and optional sugar and pepper.

Pulse the blender several times until the mixture becomes juicy, then blend on low speed until smooth or pulse as needed for a chunkier salsa.

Sample the salsa and, if necessary, add more salt or pepper to suit your preference.

Transfer the salsa to a sealed container and refrigerate for 1 to 2 hours to allow flavors to meld before serving.
