Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mash the bananas thoroughly in a large mixing bowl, then add quick oats and stir until well combined.

Stir in chocolate chips, peanut flour, cinnamon, and honey if using, mixing until evenly distributed.

Spoon approximately 2 tablespoons of dough per cookie onto baking sheet. Flatten and shape each portion with the back of a metal spoon or lightly wet fingertips.

Bake for 13–15 minutes until cookies are firm and lightly golden.

Remove from oven and allow cookies to cool on the tray for 5 minutes before transferring to a wire rack. Serve once cool.
