Heat olive oil in a large skillet over medium-high heat. Place pork chops in the skillet and sear for 3 to 4 minutes on each side until golden brown. Remove from skillet and set aside.

In the same skillet, add sliced onions. Cook over medium heat, stirring occasionally, until onions are caramelized and golden brown, about 10 minutes.

Pour beef broth and sprinkle onion soup mix over the caramelized onions. Stir to combine and bring to a gentle simmer.

Return pork chops to the skillet, nestling them into the onion mixture. Cover and simmer on low heat for approximately 15 minutes or until pork chops reach an internal temperature of 145°F (63°C).

Sprinkle shredded Swiss cheese over pork chops. Cover skillet and allow cheese to melt for 2 to 3 minutes.

Optionally, sprinkle chopped fresh parsley over the top and serve immediately with the onion gravy spooned over the pork chops.
