In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly distributed.

In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Whisk until the mixture is smooth and well-blended.

Pour the wet ingredients into the bowl with the dry ingredients. Gently fold with a spatula until just combined; do not overmix. A few small lumps in the batter are acceptable.

Preheat a non-stick frying pan over medium heat. Lightly grease with butter or oil.

Using a 1/4 cup measuring cup, pour batter onto the pan for each pancake. Cook for 2–3 minutes or until bubbles appear on the surface and the edges are set. Flip and cook the other side for approximately 2 minutes or until golden brown.

Transfer cooked pancakes to a plate. Keep warm with foil if needed. Serve immediately with desired toppings.
