Place chicken pieces in a resealable plastic bag, add the prepared seasoning mix, seal, and shake or massage until the chicken is evenly coated with spices.

Heat olive oil in a large sauté pan over medium-high heat. Add chicken pieces without overcrowding the pan, breaking them apart and coating with oil. Sauté for 8 to 10 minutes, stirring every few minutes until thoroughly cooked. Remove from heat and keep covered.

Heat a skillet over medium heat. Lightly mist each side of a tortilla with cooking spray, place in the skillet, and warm for about one minute per side. Repeat for all tortillas and set aside.
