# Ingredients Needed:

01 - 6 soft flour tortillas, taco size

→ Protein & Beans

02 - 1 pound 80% lean ground beef
03 - 1 cup canned refried beans
04 - ½ cup canned black beans, drained and rinsed (optional)

→ Vegetables & Aromatics

05 - ½ cup diced onions (optional)
06 - ½ cup diced bell peppers (optional)
07 - 2 cloves garlic, minced (optional)
08 - 1 cup Mexican-style diced tomatoes, no salt added (optional)

→ Cheese

09 - 3 cups shredded cheddar cheese

→ Seasonings & Liquids

10 - 1 packet (about 2 tablespoons) taco seasoning
11 - ½ cup water

# Step-by-Step Directions:

01 - In a large skillet over medium heat, cook ground beef, breaking it apart until no pink remains. If using, add diced onions, bell peppers, and minced garlic; sauté until softened.
02 - Sprinkle taco seasoning over the cooked beef and stir in water. Simmer for 5 minutes. If using, add diced tomatoes and black beans, and continue simmering uncovered for an additional 5 to 10 minutes until mixture thickens but is not dry.
03 - Preheat oven to 350°F. Lightly grease a 9 by 13 inch baking dish to prevent sticking.
04 - Place two tortillas at the bottom of the baking dish. Spread half of the warmed refried beans evenly over tortillas, then layer half of the beef mixture. Cover with a generous layer of shredded cheddar cheese.
05 - Add two more tortillas, spread remaining refried beans, then remaining beef mixture. Top with another generous layer of cheese. Cover with the last two tortillas and scatter remaining cheese evenly on top.
06 - Cover the dish tightly with aluminum foil and bake for 25 minutes to allow cheese to melt and layers to heat through.
07 - Remove foil and bake for an additional 10 minutes to achieve a golden, slightly crispy cheese crust.
