Heat olive oil in a large skillet over medium heat. Add diced green bell pepper and red onion, sauté until softened and onion is translucent, approximately 5 minutes.

Stir in long-grain white rice and Cajun seasoning, mixing well.

Pour in chicken broth, stir to combine, and bring the mixture to a boil. Reduce heat to low, cover with a lid, and simmer for 20 to 25 minutes until liquid is absorbed and rice is tender.

Remove from heat and let stand, covered, for 5 minutes. Fluff rice with a fork before serving.
