Pat shrimp dry with paper towels to remove moisture. In a mixing bowl, drizzle with olive oil and season with garlic powder, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Toss to coat evenly.

Preheat the air fryer to 400°F for 3 minutes. Lightly spray the basket with cooking spray if needed to prevent sticking.

Arrange shrimp in a single layer in the air fryer basket, cooking in batches if necessary. Air fry for 6 to 8 minutes, shaking or flipping halfway through, until shrimp turn pink, curl, and develop a slight crisp on the edges. Remove and squeeze fresh lemon juice on top.

In a small bowl, whisk together Greek yogurt or mayonnaise, ketchup, Dijon mustard, garlic powder, lemon juice, and paprika. Chill until serving.

Serve shrimp hot with optional dipping sauce, over salad greens, in tacos, or alongside rice. Garnish with parsley, green onion, or extra lemon wedges if desired.
